Poke holes all over the sweet potatoes with a fork. Place on baking sheet and cook 45-60 minutes, depending on how large your potatoes are.
While the potatoes are cooking, brown the butter. Place 4 tablespoons in a small pot over low heat until it bubbles. Wait a few minutes for it to start foaming and then it will quickly turn brown. Once it's reached a nice golden brown color, strain the butter through a mesh sieve to remove the milk solids (this is optional, just if you are avoiding lactose and/or what to keep these paleo). Stir in the nutmeg, paprika, and salt and set aside.
Once the sweet potatoes are done, slice them down the middle and fluff the insides a bit. Top with the bacon, herbs, and browned butter. You may also want to add another pinch of sea salt to taste.
