Season pork tenderloin with 1/2 teaspoon salt and 1/4 teaspoon pepper.
Heat oil in a skillet over medium-high heat. Sear the pork for 2-3 minutes per side, until browned.
Make slits in the pork tenderloin and stuff with the other sliced apple. Transfer to the slow cooker and sprinkle the entire mix with cinnamon and drizzle with honey.
Cook on Low for 7-8 hours, until internal temperature is 145 degrees F. Rest for at least 3 minutes before serving.
Serving Size: 1/4 lb pork tenderloin + 1/4 of the total vegetables in the slow cooker
