Preheat the waffle iron to high heat. Grease lightly with coconut oil.
In a large bowl, combine almond flour, tapioca flour, baking powder, and salt. Set aside.
Add the almond milk, eggs, maple syrup, melted coconut oil, and vanilla extract. Mix well, until smooth.
Transfer half the batter (about 3/4 cup) into the lightly greased waffle iron. Close and cook until steam stops coming out, about 5 minutes. Remove the waffle and repeat with the remaining batter.
Serving size: 2 waffles, or 1/3 entire recipe
