Over medium high heat, heat about 1/2 cup of coconut oil in a wok or shallow pot.
In a medium bowl, whisk eggs together.
In a separate medium bowl, whisk together dry ingredients: almond flour, tapioca flour, sea salt, black pepper, paprika, and cayenne pepper.
Cut chicken breast in half lengthwise.
Dip chicken strips in egg, and then dredge in flour mixture.
Drop into the coconut oil and fry until golden and cooked through, about 4-5 minutes per side.
Drain on paper towels.
Serving size: 1 chicken tender
