These dark chocolate almond butter cups are so EASY! Less than 10 minutes prep time, with options for paleo almond butter cups or keto almond butter cups. The perfect quick almond butter dessert.
In a medium sized bowl, melt the chocolate, the sweetener, and the coconut oil together in the microwave in 30 second bursts, until smooth. (You can also use a double boiler on the stove.) Stir to combine.
Place 1-2 tablespoons of the melted chocolate mixture into each cup, Freeze for 5 minutes, just until set.
Top each cup of set chocolate mixture with 1/8th of the almond butter.
Spoon the remaining chocolate equally over the top of the almond butter.
Freeze until solid. Let a cup sit at room temperature for about 5 minutes before eating.
Serving size: 1 chocolate almond butter cup
