In a large soup pot, heat the olive oil over medium-high heat. Add in the diced peppers and onion. Saute for 5 minutes, until they start to soften.
Add in the spices and cook 1 minute until fragrant.
Pour in the green chiles and vegetable broth. Bring to a boil, cover and simmer for 10 minutes.
Pour in the almond milk and potato starch, if using. (You can skip the starch if you'd like, but it will be thinner.) Stir to combine.
Stir in the shredded turkey and cook 5 minutes.
Serving Size: 1 1/2 cup
