This EASY paleo vegan spinach artichoke dip recipe is ready in less than 30 minutes! HEALTHY, paleo, vegan - everyone can enjoy this dairy-free vegan spinach and artichoke dip.
In an oven-safe skillet, melt coconut oil and saute garlic and onion for 2-3 minutes, until the onions are slightly translucent. Add the spinach and wilt 2-3 minutes, then stir in the artichokes and green onions. Remove from heat.
Add in remaining ingredients and stir until very well combined. Taste and adjust seasonings as desired.
Broil dip on low rack until hot and bubbly, about 3-5 minutes, watching closely so that it doesn't burn.
Sprinkle with smoked paprika, if desired, and serve with sliced veggies or paleo tortilla chips or crackers.
