A healthy grilled bruschetta chicken recipe = the best summer dinner! Easy balsamic bruschetta chicken is packed with flavor and naturally low carb.
Pour the vinegar, olive oil, and sea salt over the chicken, and refrigerate 1 hour.
Preheat your grill to high and grill chicken about 7 minutes per side, or until the internal temperature reaches 160° F. Cover and rest at least 5 minutes to allow the temperature to reach 165° F.
Toss the tomatoes with the basil and drizzle in olive oil. Season with salt to taste.
Divide the spiralized zucchini between four bowls. Toss with olive oil and sea salt. Top with bruschetta and chicken.
Serving size: 6 ounces chicken, 1 cup zoodles, and bruschetta on top
