This authentic Greek lemon chicken recipe is so EASY to make. One simple Greek lemon chicken marinade, a skillet and half an hour, and dinner is ready!
In a small bowl mix together the lemon juice, olive oil, Greek seasoning, and salt. Pour over the chicken thighs and let sit for 10 minutes while preparing the remaining ingredients.
Heat a cast-iron skillet over high heat. Sear the chicken, skin side down, for 5-6 minutes without moving. Flip and continue to cook for 10-15 minutes, until the chicken is cooked through. Remove, set on a plate, and cover to keep warm.
Reduce the heat to low and add in the garlic and onion. Heat, stirring constantly until soft, about 2 minutes.
Add in the tomatoes and artichokes, cook while stirring 1 minute. Add in the cauliflower rice and cook for 5 minutes, until soft and dry.
Add in the lemon slices, chicken, and any juices that are on the plate. Cook for another minute or so to reheat the chicken.
Serving size: 1 chicken thigh + 1/4 of the pan of veggies/cauliflower rice (1/4 of entire recipe)
