Learn how to make potato skins with this sweet potato skins recipe. Paleo loaded sweet potato skins are packed with so much flavor, you'd never guess they are healthy.
Preheat oven to 400°F and pierce the potatoes with a fork a few times. Bake for 45 minutes - 1 hour until easily pierced with a knife.
In a large skillet cook the bacon over medium heat until crispy. Remove and set aside. In the bacon fat add your diced chicken breast and cook until golden on each side and cooked through, about 6-8 minutes. Set aside with the bacon.
Add the onions and mushrooms to the same skillet. If there's not enough fat, add in a little of your choice. Cook, stirring occasionally, for about 5-10 minutes, until the onions and mushrooms are soft. Season with salt and pepper, to taste.
Place the skins, skin side up, on a baking sheet and drizzle with your fat of choice. Broil for 3 minutes or until the skin is crisp. Flip and continue to broil another 2-3 minutes, until the skin starts to char just a bit.
Serving Size: 2 sweet potato skins or 1/4 entire recipe
