These grilled chicken satay skewers are perfect for parties or entertaining because everyone loves food-on-a-stick, but also because the chicken satay marinade can be made ahead of time so you can prep things ahead. This meal is super flavorful, light, and filling all at the same time.
What Is Chicken Satay?
Thai chicken satay skewers are a really flavorful Asian dish that is made of cut chicken breasts, that have been marinated and threaded onto skewers. It’s typically served with a flavorful dipping sauce.
The sauce for easy chicken satay is usually made of peanuts, but because peanuts aren’t paleo, I created this grilled chicken satay recipe that’s completely paleo! Instead of the peanuts, I’m using almond butter in the dipping sauce. Same great flavor, better-for-you paleo ingredients!
How To Make Chicken Satay Marinade
Making your own chicken satay marinade is super easy! Simply whisk together some coconut milk, lime juice, honey, coconut aminos, anchovy paste, and sea salt in a small bowl.

You are going to be so happy when you find out how easy this Thai chicken recipe truly is. Many of the ingredients are the same for the chicken satay marinade and the dipping sauce, so don’t be intimidated by the long ingredient list.
Here are the super simple steps for how to make to make this grilled chicken satay recipe:
- Marinate the chicken. Place sliced chicken into a baking dish, top with marinade, and refrigerate for at least 1 hour.
- Mix all the ingredients for the almond dipping sauce together in a blender until it becomes smooth: almond butter, jalapeno, garlic, ginger, water, coconut aminos, coconut milk, lime juice, sesame oil, honey, anchovy paste (or fish sauce), sea salt and lime wedges. Chill the sauce for at least 30 minutes so the flavors can come together.
- Grill the chicken satay skewers. Serve grilled chicken satay in sauce and drizzle with lime juice.
Does Chicken Satay Have Gluten?
Many versions of Thai chicken satay have gluten. So, if you eat gluten-free, it’s not a great idea to order it at a restaurant. Gluten is typically found in soy sauce, which is usually used in chicken satay marinade and sometimes in the sauce.
My chicken satay recipe is gluten-free (and paleo!), because we’re using coconut aminos in place of the soy sauce.
Can You Make Chicken Satay Skewers Ahead Of Time?
Yes, you can make chicken satay skewers ahead of time. All you need to do is follow the instructions as directed then allow the chicken skewers to cool down. Remove the chicken from the skewer, then place in an airtight container. The best chicken satay recipe will last 3-4 days in the fridge as long as it’s stored properly.
But you know what’s even better? Simply marinate the chicken ahead of time. This easy Thai chicken recipe will be even more flavorful if you let it sit in the chicken satay marinade for longer!
You can prepare the sauce in advance, as well. Then, just grill the chicken right before serving. Dip the chicken in the dipping sauce, or serve it over a salad.
Can You Freeze This Grilled Chicken Satay Recipe?
Yes, you can freeze this Thai chicken satay recipe. Place the grilled chicken satay in a freezer safe container and store it in the freezer for up to 3 months. To thaw the grilled chicken satay, put it in the fridge overnight.
You can even freeze the chicken satay marinade if you are doing meal prep. Just prepare the marinade and place it in a freezer-safe bag or container. It will last 1-2 months in the freezer. Another option is to add the raw chicken into the marinade, thaw in the refrigerator overnight, and grill as directed.
How To Reheat Thai Chicken Satay
There are several ways you can reheat chicken satay skewers. By far, the easiest way is to warm the Thai chicken satay in the microwave. It’s fast and easy! Cover the chicken with a paper towel then heat for 30 seconds – 1 minute until it’s heated through.
You can also heat this easy Thai chicken recipe on the stove top. Just heat a little bit of olive or coconut oil (I prefer coconut because of the flavor) in a skillet. Place the chicken in the pan and warm up until it’s the desired temperature.
Lastly, you can heat the chicken in the oven at 325 degrees F for 10-15 minutes, until it’s hot enough.

Marinade
- 1 lb Boneless skinless chicken breast (sliced into long thin strips)
- 1/2 cup Full-fat coconut milk
- 1 tablespoon Lime juice
- 1/2 tablespoon Honey
- 1 teaspoon Coconut aminos
- 1/2 teaspoon Sesame oil
- 1/4 teaspoon Anchovy paste (or fish sauce)
- Pinch Sea salt
Almond Dipping Sauce
- 1/2 cup Almond butter
- 1/2 medium Jalapeño
- 1 clove Garlic
- 1/2 teaspoon Fresh ginger
- 1/4 cup Hot water
- 2 tablespoons Coconut aminos
- 2 tablespoons Full-fat coconut milk
- 1 tablespoon Lime juice
- 1 teaspoon Sesame oil
- 1 teaspoon Honey
- 1/4 teaspoon Anchovy paste (or fish sauce)
- Pinch Sea salt
- Lime wedges (for serving)
Instructions

Slice the chicken into long thin strips, you'll have about 15 for 1 lb of chicken. Place in a shallow dish. Combine all other marinade ingredients and pour over chicken. Chill for at least one hour.
- To make the dipping sauce combine all the ingredients in a blender and blend until very smooth. Set aside to let the flavors develop a bit.
Preheat the grill to high and grill chicken for 5 minutes per side until nice and charred and cooked through. Serve with dipping sauce and lime wedges.
