Sometimes it’s just too hot to turn on your stove or oven. And while we used to go out, these days, we’re all staying in and grilling dinner. Seriously we haven’t found something that we can’t grill yet! Loving it.
This Grilled Chicken with Strawberry Avocado Salsa shouldn’t even really be considered a recipe. It takes literally 10 minutes to come together and is super healthy and satisfying all at the same time. Win!
Can we just admire the grill marks on the chicken though? SO GOOD.
This recipe is written for 2 people, as are most of my recipes, but as with all of them you can easily double or triple the ingredients to serve more.

Grilled Chicken with Strawberry Avocado Salsa
Ingredients

Ingredients for Salsa
- 1 1/2 cups strawberries (chopped)
- 1 medium jalapeño (finely diced)
- 2 medium avocado (diced)
- 1/4 cup Fresh cilantro (minced)
- 4 tablespoons lime juice
- 2 tablespoons olive oil
- 1/4 cup Red onion (diced)
- sea salt (to taste)
Ingredients for Chicken
- 4 medium chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons your favorite seasoning (jerk, Cajun, blackening, etc.)

- In a small bowl combine salsa ingredients. Season with salt to your taste. Set aside so flavors can marinate while you cook the chicken.
- Season chicken and grill over medium heat for about 5 minutes on each side or until done.
- Top with salsa and serve
