This delicious cucumber mint salad is so good, it’s almost hard to tell if it’s a side dish or dessert! It’s naturally sweetened with fresh cut strawberries, combined with cucumber and mint. Serve this strawberry cucumber salad anytime you host a dinner party to add an elegant touch to your meal.
All I know is that it’s summer perfection and I can’t stop eating it. It’s totally refreshing during these HOT(TTTT!!!!) summer days and eating strawberry mint salad is a great way to cool down. Another one of my favorite summer recipes are these flavorful salted watermelon margaritas!
Just a few of summer’s favorite ingredients and 5 minutes are all you need to whip this bad boy up. You don’t even need dressing, but you can drizzle on some strawberry balsamic vinaigrette if you want to.
Strawberry and cucumber salad would no doubt be a hit at any BBQ or covered dish supper… are covered dish suppers a Southern thing?? Plus, it will be a nice light contrast to the mayonnaise-laden salads that people usually bring. You win.
How To Make Cucumber Salad
You are going to be pleased with how easy it is to make this cucumber mint salad! Take a look at these super easy steps:
- Chop the strawberries. Simply slice tops off strawberries and cut them in half.
- Peel cucumbers, remove seeds and chop into bite-sized pieces. Add to strawberries.
- Add lime zest and olive oil to the strawberries and cucumbers.
- Toss in minced mint.
…And you have a gorgeous strawberry cucumber salad!
Strawberry And Cucumber Salad Variations
I love recipes with fresh ingredients that I can change from time to time. There are so many flavorful foods you can add into this cucumber and mint salad.
Try any of these ideas to add additional flavors:
- Watermelon – Dice up a few pieces of watermelon. Don’t add a ton, just enough to give it even more flavor.
- Spinach – If you are looking for some greens in your strawberry mint salad, spinach is always a great choice. Add in 1 or 2 cups depending on how many people you are serving.
- Arugula – Another option to add some extra nutrients to the strawberry summer salad. Try it!
- Avocado – You can never go wrong adding a little bit of sliced avocado any salad. This strawberry salad recipe is no exception!
- Pecans or walnuts – I love the crunch that a few pecans add to the cucumber salad with strawberries. Yum!
- Balsamic – While my cucumber mint salad doesn’t need dressing, you can certainly give it a drizzle of balsamic vinegar.
