I’ve seriously made this bacon wrapped jalapeno poppers recipe at least four times in the past week, and each time I can’t stop talking about how dang good they are. The smoky meat paired with the sweet and tangy sauce is a match made in heaven. You can make grilled jalapeno poppers or baked jalapeno poppers with this recipe. Totally up to you.
I tried these a few different ways. On the grill, in the oven, and under the broiler. The grill is the clear winner – no question! Not only does the jalapeño get nice and charred, but the bacon crisps up and it just has the best flavor. If you can’t use your grill to make these stuffed jalapeno poppers, the broiler works well too!
No matter what you use to make this bacon wrapped stuffed jalapenos recipe, I promise these will become one of your favorite appetizers.
How To Make Jalapeno Poppers
Making these stuffed jalapeno poppers is easier than you might think! They are easy to cook and they make a fabulous side dish or appetizer.
Okay, full disclosure… I may even eat them as my meal sometimes! You’ll understand why when you taste your first bite.
Enough talking, time to tell you how to make these delicious bacon jalapeno poppers:
- Prep the jalapenos. Clean and remove seeds from peppers.
- Make the stuffing mixture. Mix chorizo, beef, onion, garlic powder and salt into a bowl. Fill the jalapenos with the stuffing.
TIP: Be sure to overfill them, because the meat will shrink once cooked. Plus you’ll be wrapping them with bacon, so the meat will stay put.
- Wrap the peppers with bacon. Cut the bacon in half first, and then use one piece to wrap each popper.
TIP: You can use little skewers to secure the bacon if it doesn’t stay put.
- Broil or grill until done. Be sure to turn the poppers frequently, so they don’t burn.
BROILING TIP: If you use the broiler for these bacon wrapped jalapenos, place them on a wire rack on top of a baking sheet. That way the drippings drip through the rack and allow the poppers to crisp up. Otherwise, you’ll have too much grease making them soggy.
- Make the maple glaze. Simply mix together the mustard and maple syrup, then coat the stuffed jalapeno poppers the last few minutes of cooking.
TIP: You can skip the maple glaze if you like a low carb version.
How Do You Prepare Jalapenos?
Jalapenos are simple to prepare once you get the hang of it. Removing the seeds and ribs is similar to working with larger bell peppers. A jalapeno corer can save a lot of time, too.
TIP: Wear gloves when preparing baked jalapeno poppers. The oil that is inside of a jalapeno can be extremely irritating to your skin. Make sure not to touch your eyes, face, or any other body part with the oil, or it will sting like crazy. Not that I would know from experience or anything… 😉
Are Bacon Wrapped Jalapeno Poppers Spicy?
Grilled jalapeno poppers can be as spicy as you want them to be.
If you prefer these easy jalapenos poppers to be really mild, simply wash them really well with cold water and remove all the seeds. Remove all the white parts inside as well, which carry some heat. Also, make sure you are using mild chorizo!
If you like the jalapeno poppers to be hot, then you can barely rinse the peppers and include some of the seeds in the stuffing mixture for some added spice. You can really adjust the heat to your liking with this jalapeno poppers recipe.
What Is Chorizo?
Chorizo is a pork sausage that is a key ingredient in these healthy jalapeno poppers. Chorizo is mildly spicy, so it will add a little bit of heat to the homemade jalapeno poppers.
You will find that chorizo is very flavorful and really enhances the flavors in this easy jalapeno poppers recipe.
Can Baked Jalapeno Poppers Be Made Ahead?
Yes, you can make these baked jalapeno poppers ahead of time if you want to. Prepare as many bacon wrapped jalapeno poppers as you wish, then place them in an airtight container. They will last 3-4 days in the fridge.
When you are ready to serve them, cook them using the same grilling or broiling instructions on the recipe card below. If you are just reheating previously cooked ones, that’s best to do in the oven at 350 degrees F for 10-15 minutes, until hot.
Can You Freeze This Jalapeno Poppers Recipe?
Yes, you can freeze these bacon wrapped jalapeno poppers. Place the stuffed jalapeno poppers on a cookie sheet, so they aren’t touching. Then put them in the freezer for 2 hours until the grilled jalapeno poppers are relatively frozen.
After they are frozen, you can move them to an airtight container. Flash freezing the baked jalapeno poppers in a single layer first will help prevent them from sticking to each other when they are stored.
They will last 1-2 months in the freezer.
To thaw, grab as many stuffed jalapeno poppers as you need and thaw them in the fridge overnight. Then, heat them in the oven at 350 degrees F, or microwave.

- 12 large Jalapeños
- 1/2 pound Ground beef
- 1/2 pound Chorizo
- 1/4 small White onion (minced)
- 1/4 teaspoon Garlic powder
- 1/4 teaspoon Sea salt
- 6 slices Bacon (cut in half)
- 1 tablespoon Whole grain mustard
- 1 tablespoon Maple syrup

Preheat the grill or broiler to high.
Cut the tops of the jalapeños and slice in half. Remove the seeds.
In a large bowl, combine the beef, chorizo, onion, garlic powder, and salt. Stuff the jalapeños with the mixture. Be sure to overfill them because the meat will shrink once cooked. Plus you'll be wrapping them with bacon so the meat will stay put.
If your bacon is thick cut, you'll want to roll it out with a rolling pin the lengthen and flatten it. Wrap each popper with about a half a strip of bacon.
If grilling, transfer poppers to the grill and cook about 20-25 minutes, flipping frequently.
If using a broiler, place the poppers on a wire rack on top of a baking sheet. Broiler about 6 inches away from the flame for about 30 minutes, turning frequently, until the bacon is crispy and cooked through.
When you have about 3 minutes of cooking time left, brush with the maple mustard glaze.

Serving Size: 2 jalapeno poppers
For a low carb version without sugar, omit the glaze.
